Surimi is fish meat protein which is extracted from the fresh whole fish, washed to eliminate soluble materials, blended with cryprotectants (sugar, polyphosphates) and frozen in blocks.
 
Source of fish catching: Gulf of Tonkin and Central & South Sea ground of Vietnam.
 
Kinds of fish: Threadfin Bream (Itoyori), Big Eye (Kintokidai), Lizard fish (Esso), White or Yellow Croaker (Guchi), Conger Pike (Hamo).
